  • 1 pound boneless, skinless chicken breasts or thighs, cut into slider-sized pieces
  • 1 cup all-purpose flour (or gluten-free blend)
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano or basil)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 cup neutral oil for frying (canola or avocado oil)
  • 12 slider-sized brioche or potato buns
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, finely minced or grated
  • 1/3 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)
  • Pinch of salt
  • 1/2 cup Caesar dressing (homemade or store-bought)
  • 1 cup finely shredded romaine lettuce
  • Extra Parmesan for topping (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Pound chicken pieces lightly to about 1/2-inch thick and season with salt and pepper.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko, Parmesan, garlic powder, Italian herbs, salt, and pepper.
  3. Dip each chicken piece in flour, then egg, then panko mixture. For extra crunch, double-dip: egg, panko, egg, panko.
  4. Heat oil in a large skillet over medium-high heat. Fry chicken 3–4 minutes per side until golden and cooked through (165°F internal temp). Drain on a wire rack or paper towel-lined plate.
  5. Preheat broiler to high. Melt butter and stir in garlic and a pinch of salt. Brush cut sides of buns with garlic butter, sprinkle with Parmesan and parsley. Broil cut side up for 1–2 minutes until golden.
  6. To assemble, layer crispy chicken on each bottom bun, drizzle with Caesar dressing, add shredded romaine, and extra Parmesan if desired. Top with the cheesy bun.
  7. Serve immediately, with a squeeze of lemon if desired.

Notes

Double-dip the chicken for extra crunch. For gluten-free, use GF panko and buns. To make ahead, keep components separate and reheat chicken in a hot oven before assembling. Air fryer and baked methods work as well. For extra flavor, add lemon zest to the garlic butter.
