  • 1 cup (200 g) sugar, granulated or coconut sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1/2 cup (90 g) dark chocolate chips (optional)
  • 1/4 cup (60 g) smooth nut butter (almond or peanut butter)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a food processor or blender, combine the rinsed black beans, nut butter, eggs, and vanilla extract. Blend until completely smooth and creamy, about 1-2 minutes.
  3. In a separate bowl, whisk together the cocoa powder, sugar, baking powder, and salt.
  4. Pour the bean mixture into the dry ingredients and stir gently until just combined, avoiding overmixing.
  5. Fold in the dark chocolate chips gently with a spatula.
  6. Scrape the batter into the prepared pan and spread evenly with a spatula.
  7. Bake for 20-25 minutes, starting to check at 20 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
