  • 2 large sweet potatoes (about 1 1/2 lbs, peeled and chopped into 1-inch cubes)
  • 1 large red onion (peeled and cut into thick wedges)
  • 2 cups broccoli florets (optional)
  • 1 red bell pepper (cut into chunks)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 3 large garlic cloves (minced)
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon balsamic vinegar (or apple cider vinegar)
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and chop sweet potatoes into 1-inch cubes. Slice sausage into 1-inch rounds. Cut red onion into thick wedges, and chop bell pepper and broccoli into bite-sized pieces.
  3. In a large mixing bowl, combine sweet potatoes, sausage, onion, bell pepper, and broccoli. Drizzle with olive oil, salt, and pepper. Toss until evenly coated.
  4. Spread the mixture in a single layer on a large rimmed sheet pan (use parchment paper for easy cleanup).
  5. In a small bowl, whisk together honey, minced garlic, soy sauce, balsamic vinegar, and smoked paprika (if using).
  6. Pour half the honey garlic glaze over the sheet pan mixture. Toss gently to coat. Reserve the rest of the glaze.
  7. Bake for 20 minutes.
  8. After 20 minutes, use a spatula to flip everything gently. Drizzle the remaining glaze over the top and toss lightly.
  9. Return to the oven and bake for another 10–15 minutes, until sweet potatoes are fork-tender and sausage edges are golden-brown (total baking time: 30–35 minutes).
  10. Check doneness: sweet potatoes should be soft inside with crispy edges, sausage should be sizzling and browned. If needed, bake 5 more minutes.
  11. Let cool for 3–5 minutes before serving. Optionally, sprinkle with fresh parsley or thyme.

Notes

Cut vegetables into similar sizes for even cooking. Don’t overcrowd the pan—use two pans if needed for crispy edges. Glaze in stages for best flavor. For gluten-free, use tamari instead of soy sauce. Leftovers keep well and are great for meal prep. Add a splash of water mid-bake if the pan looks dry. Rotate the pan halfway through if your oven heats unevenly.
