  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup pepper jack cheese, shredded
  • 6 slices cooked bacon, chopped
  • 2 medium fresh jalapeños, seeded and finely diced
  • 2 green onions, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Optional: 1/4 tsp smoked paprika
  • Optional: Extra cheese (gouda or mozzarella) for variation
  • Optional: Jalapeño slices for garnish

Instructions

  1. Cook bacon until crispy (about 7-8 minutes in the air fryer at 400°F or pan-fry), drain, and chop into small bits. Let cool.
  2. In a large bowl, combine softened cream cheese, shredded cheddar, shredded pepper jack, diced jalapeños, chopped green onions, garlic powder, black pepper, and chopped bacon. Mix until evenly combined.
  3. Portion the mixture into 1-inch balls using a small cookie scoop or spoon. Place on a parchment-lined tray. Chill for 15 minutes if too sticky. You should get about 18–22 cheese balls.
  4. Set up a coating station: place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
  5. Roll each cheese ball in flour (tap off excess), dip in egg, then roll in panko until evenly coated.
  6. Preheat the air fryer to 375°F for 3 minutes.
  7. Place cheese balls in the air fryer basket in a single layer. Spray lightly with oil if desired. Air fry at 375°F for 7–9 minutes, flipping halfway through, until golden and crispy.
  8. Let cheese balls rest for 2–3 minutes before serving. Serve hot with your favorite dipping sauce.

Notes

For gluten-free, use gluten-free flour and panko. For keto, use almond flour and crushed pork rinds. Chill the cheese mixture if too sticky. Double-coat for extra crunch. Don’t overcrowd the air fryer. Serve with ranch, blue cheese, or chipotle mayo. Cheese balls can be prepped ahead and air fried from chilled or frozen.
