Soft, chewy cookies bursting with apple cinnamon goodness, topped with a sweet glaze—perfect for cozy fall afternoons or festive gatherings.

Ingredients

Scale
  • 2 medium-sized apples, peeled, cored, and diced (Honeycrisp or Granny Smith)
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 cup powdered sugar
  • 12 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add the egg and vanilla extract to the butter mixture. Beat until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Gently fold in the diced apples and ensure they’re evenly distributed in the dough. The dough will be slightly sticky.
  6. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the cookies are lightly golden on the edges. They should still be soft in the center.
  8. While the cookies are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar and water until smooth. Adjust the consistency by adding more water, 1 teaspoon at a time, if necessary.
  9. Once the cookies are out of the oven, let them cool for 5 minutes on the baking sheet before transferring them to a cooling rack.
  10. Drizzle the glaze over the cooled cookies and allow it to set for about 10 minutes before serving.

Notes

[‘Pick firm, slightly tart apples like Granny Smith or Honeycrisp for the best results.’, ‘Don’t overmix the dough to keep the cookies soft and chewy.’, ‘Pat diced apples dry with a paper towel to remove excess moisture.’, ‘Chill the dough for 20-30 minutes if it feels overly sticky.’, ‘Double the batch for larger gatherings.’]
