  • 1 pound (450 grams) Little Smokies Sausages
  • 1012 slices bacon (regular cut preferred)
  • 1/4 cup (50 grams) light brown sugar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a medium bowl, whisk together 1/4 cup (50g) brown sugar, 2 tablespoons honey or maple syrup, and 1 tablespoon Dijon mustard until smooth.
  3. Wrap each little smokie tightly in a half slice of bacon, securing with a toothpick. Repeat for all smokies.
  4. Dip each bacon-wrapped smokie into the brown sugar glaze using tongs to coat evenly. Place them on the prepared baking sheet or wire rack, spaced slightly apart.
  5. Bake for 20-25 minutes. Halfway through (10-12 minutes), baste the smokies with remaining glaze and flip them to ensure even caramelization.
  6. Optional: Broil for the last 2-3 minutes for extra crispy bacon, watching carefully to prevent burning.
  7. Remove from oven and let cool for 5 minutes before serving.

Notes

Do not overcrowd the baking sheet to allow bacon to crisp properly. Baste halfway through baking for best glaze coverage. Use room temperature smokies for even cooking. Optional broil at the end for extra crispiness but watch closely to avoid burning. Leftovers can be reheated in the oven to maintain crispness.
