A quick and easy BBQ chicken flatbread pizza featuring smoky BBQ sauce, tender chicken, and melty cheese on a crispy flatbread crust. Perfect for weeknight dinners or casual get-togethers.

  • 2 large store-bought flatbreads or naan
  • 2 cups shredded cooked chicken (rotisserie or grilled)
  • 1/2 cup smoky barbecue sauce
  • 1 small red onion, thinly sliced
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • A handful chopped cilantro (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to heat for 15 minutes.
  2. In a mixing bowl, toss shredded cooked chicken with BBQ sauce, garlic powder, salt, and pepper until evenly coated.
  3. Lightly brush each flatbread with 1/2 tablespoon olive oil on one side and place oil-side down on a preheated baking sheet or pizza stone.
  4. Spread half the BBQ chicken mixture evenly over each flatbread, leaving a small border around the edges. Top with half the sliced red onions, then sprinkle 3/4 cup mozzarella and 1/4 cup cheddar cheese on each.
  5. Bake the pizzas for 10-12 minutes until cheese is bubbly and golden and flatbread edges are crisp. Optionally broil for 1-2 minutes for extra crispiness, watching closely to avoid burning.
  6. Remove from oven and sprinkle chopped cilantro on top. Let rest a couple of minutes before slicing and serving.

Notes

Use warm cooked chicken for better flavor absorption. Preheat baking surface to ensure a crispy crust. Avoid overloading toppings to prevent sogginess. Let pizza rest before slicing for cleaner cuts. For extra crispiness, broil for 1-2 minutes at the end but watch carefully.
