  • 1 cup (225g) salted butter, softened
  • 2 cups (250g) all-purpose flour
  • ¾ cup (90g) powdered sugar
  • 2 large egg yolks, room temperature
  • 1 teaspoon vanilla extract
  • Optional: Coarse sea salt for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together 2 cups (250g) of all-purpose flour and a pinch of salt (if using unsalted butter).
  3. In a large mixing bowl, cream 1 cup (225g) of softened salted butter with ¾ cup (90g) of powdered sugar until smooth and fluffy using a wooden spoon.
  4. Mix in 2 large egg yolks and 1 teaspoon of vanilla extract until well combined.
  5. Gradually add the flour mixture to the butter mixture, stirring until a soft dough forms. Avoid overmixing.
  6. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  7. On a lightly floured surface, roll out the chilled dough to about ¼-inch (6mm) thick. Use a cookie cutter to create shapes and transfer them to the prepared baking sheet.
  8. Optional: Sprinkle a pinch of coarse sea salt on top of each cookie.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are just turning golden.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
