Ingredients

Scale
  • 1 lb ground beef (80/20 preferred)
  • 1/2 cup yellow onion, finely diced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 12 slider buns (Hawaiian rolls or any soft dinner roll)
  • 8 slices American cheese (or cheddar)
  • 1/2 cup dill pickles, thin-sliced
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 2 tbsp unsalted butter, melted
  • 1 tbsp sesame seeds
  • Optional: 1 tbsp dried minced onion

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large skillet over medium-high heat, cook ground beef and diced onions for 5-7 minutes until beef is browned and onions are soft. Season with salt, pepper, and garlic powder. Drain excess fat if needed.
  3. In a small bowl, mix mayonnaise, ketchup, sweet pickle relish, white vinegar, onion powder, and paprika to make the special sauce. Whisk until smooth.
  4. Without separating the rolls, slice the entire sheet of slider buns in half horizontally. Place the bottom half in the prepared baking dish.
  5. Spread half of the special sauce evenly over the bottom buns.
  6. Scatter the cooked beef and onion mixture over the sauce.
  7. Top with cheese slices, covering the beef completely.
  8. Add a layer of thin-sliced dill pickles.
  9. Drizzle the remaining special sauce over the pickles.
  10. Place the top half of the slider buns over the filling.
  11. Melt butter and brush over the tops of the buns. Sprinkle with sesame seeds and optional dried minced onion.
  12. Cover the dish loosely with foil and bake for 20 minutes. Remove foil and bake another 5-7 minutes until tops are golden and cheese is bubbly.
  13. Let rest for 5 minutes before serving. Pull apart and enjoy!

Notes

For a lighter version, use ground turkey or chicken. Gluten-free buns and dairy-free cheese can be substituted for dietary needs. Prep the beef and sauce ahead for faster assembly. Cover with foil to prevent over-browning. Let rest before serving for clean pull-apart sliders. Add bacon, jalapeños, or swap cheeses for variations.
