Delicious breakfast sliders made with sweet Hawaiian rolls, scrambled eggs, crispy bacon, and melted cheese, perfect for brunch parties or cozy mornings.

  • 12-count Hawaiian rolls, split horizontally
  • 810 slices bacon, cooked until crispy and drained
  • 6 large eggs, scrambled with 2 tablespoons milk
  • 8 ounces sharp cheddar or Swiss cheese, sliced or shredded
  • 4 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 tablespoon Dijon mustard (optional)
  • Salt and pepper to taste
  • Fresh chives or parsley, finely chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels.
  3. In a mixing bowl, whisk 6 large eggs with 2 tablespoons milk, salt, and pepper.
  4. Pour eggs into the skillet (wipe excess bacon grease if needed) and cook over medium-low heat, stirring gently until just set but still moist, about 3-4 minutes. Remove from heat.
  5. Slice the 12-count Hawaiian rolls horizontally in half, keeping all rolls connected if possible.
  6. Place the bottom half of the rolls in a 9×13-inch baking dish.
  7. Spread scrambled eggs evenly over the rolls, then layer crispy bacon slices on top.
  8. Add a layer of 8 ounces shredded or sliced cheese.
  9. Add the top half of the rolls.
  10. In a small bowl, mix 4 tablespoons melted butter with 1 teaspoon garlic powder and 1 tablespoon Dijon mustard.
  11. Brush this mixture generously over the tops of the rolls.
  12. Bake the assembled sliders in the preheated oven for 15-20 minutes, or until the cheese melts and the tops are golden brown.
  13. Sprinkle chopped fresh chives or parsley over the sliders for garnish.
  14. Cut apart at the natural roll seams and serve warm.

Notes

For a dairy-free twist, swap butter for olive oil and cheese for a plant-based alternative. Turkey bacon or sausage patties can replace bacon. Use gluten-free rolls for a gluten-free version. Avoid over-baking to keep sliders moist. Assemble the night before and refrigerate for easy make-ahead.
