  • 2 tbsp unsalted butter, melted (28 g)
  • 1/2 cup mayonnaise (120 ml)
  • 2 tbsp Dijon mustard (30 ml)
  • 2 tbsp honey (30 ml)
  • 1 tsp lemon juice (5 ml)
  • Salt, to taste
  • 1 cup celery sticks, sliced (100 g)
  • 1 cup carrot sticks, sliced (100 g)
  • 1/4 cup blue cheese crumbles (optional, 30 g)
  • Chopped green onions or chives for garnish

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C). In a mixing bowl, combine flour, garlic powder, onion powder, salt, and pepper. Toss chicken pieces in the dry mix to coat evenly.
  2. Arrange coated chicken bites on a parchment-lined baking sheet or air fryer basket in a single layer. Bake for 15-18 minutes, flipping halfway through, until golden and cooked through. If air frying, cook for 12-15 minutes. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
  3. While chicken cooks, whisk melted butter and buffalo hot sauce in a small bowl to make the buffalo sauce.
  4. Toss hot chicken bites gently in the buffalo sauce until evenly coated.
  5. In a separate bowl, whisk together mayonnaise, Dijon mustard, honey, lemon juice, and salt until smooth and creamy. Adjust honey or lemon juice to taste.
  6. Assemble the party bowl by arranging buffalo chicken bites alongside celery and carrot sticks. Sprinkle blue cheese crumbles on top if using, and garnish with chopped green onions or chives.
  7. Serve the honey mustard dip in a small bowl on the side for dipping.

For extra crispy bites, broil for 1-2 minutes at the end but watch carefully to avoid burning. Pat chicken dry before coating to help crispiness.
