Caramel Apple Pancakes

  • 1 ½ cups (190g) all-purpose flour
  • 2 tbsp (30g) granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 cup (240ml) milk
  • 1 large egg
  • 2 tbsp (30ml) vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 medium apple, peeled and diced
  • ½ cup (100g) brown sugar
  • ¼ cup (60ml) heavy cream
  • 2 tbsp (30g) unsalted butter
  • Pinch of salt

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In a separate bowl, combine the milk, egg, vegetable oil, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the diced apples.
  3. Preheat your nonstick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.
  4. Pour about ¼ cup (60ml) of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
  5. In a small saucepan, combine the brown sugar, heavy cream, and butter. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture thickens slightly (about 3-5 minutes). Add a pinch of salt.
  6. Stack the pancakes on a plate, drizzle generously with caramel sauce, and enjoy warm.
