  • 4 medium apples, peeled and diced (Granny Smith recommended)
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup unsalted butter
  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the lined pan to form an even layer. Bake for 8 minutes and set aside to cool.
  3. Using an electric mixer, beat softened cream cheese until smooth. Add sugar, eggs, and vanilla extract, and mix until fully combined. Pour the cheesecake mixture over the cooled crust, spreading it evenly.
  4. In a saucepan, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 8-10 minutes, stirring occasionally, until apples are tender and caramelized.
  5. Spoon the cooked apple mixture over the cheesecake layer, spreading it evenly with a spatula.
  6. Place the pan in the oven and bake for 40-45 minutes, or until the cheesecake is set and the edges are lightly golden.
  7. Allow the bars to cool at room temperature for 1 hour, then chill in the refrigerator for at least 2 hours before slicing.
