  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup (120ml) warm milk (around 110°F/43°C)
  • 1/3 cup (75g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1/2 tsp salt
  • 3 medium apples, peeled and diced (Honeycrisp or Granny Smith recommended)
  • 1/4 cup (50g) brown sugar
  • 1 tsp cinnamon
  • 2 tbsp unsalted butter
  • 1 tbsp cornstarch mixed with 1 tbsp water (optional, for thickening)
  • 1 cup (200g) granulated sugar
  • 1/4 cup (60ml) water
  • 1/2 cup (120ml) heavy cream, room temperature
  • 2 tbsp unsalted butter
  • Pinch of salt
  • 1/4 cup (50g) brown sugar
  • 2 tsp cinnamon
  • 2 tbsp unsalted butter, softened

Instructions

  1. In a large bowl, combine the warm milk and sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until frothy. Add the eggs, softened butter, salt, and flour. Mix until a soft dough forms. Knead for 8-10 minutes until smooth and elastic. Cover and let it rise for 1 hour or until doubled in size.
  2. In a saucepan, melt the butter over medium heat. Add the diced apples, brown sugar, and cinnamon. Cook for 5-7 minutes until the apples soften. If needed, add the cornstarch slurry to thicken the mixture. Set aside to cool.
  3. Heat the sugar and water in a saucepan over medium heat until it turns golden brown. Reduce the heat and slowly add the cream, stirring constantly. Add the butter and salt, then let it cool slightly.
  4. Punch down the risen dough and roll it out into a 12×18-inch rectangle. Spread the softened butter on top, then sprinkle the brown sugar and cinnamon evenly.
  5. Spread the cooled apple pie filling over the dough, leaving a small border around the edges.
  6. Carefully roll the dough into a tight log starting from the long edge. Slice into 12 equal rolls and place them in a greased 9×13 baking dish. Cover and let them rise for another 30 minutes.
  7. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown.
  8. Once the rolls are slightly cooled, drizzle the caramel sauce generously over the top.
