  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/2 cup frozen corn or peas
  • 1 package (11 oz) Cheddar Bay biscuit mix (like Red Lobster brand)
  • 1/2 cup cold water
  • 1/2 cup shredded sharp cheddar cheese
  • 4 tbsp unsalted butter, melted
  • 1 tsp dried parsley or chives
  • Nonstick cooking spray or butter (for greasing the casserole dish)
  • Optional: extra shredded cheese for sprinkling on top

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Cook for 5-6 minutes until browned and no longer pink. Drain excess fat if needed.
  2. Add diced onion and bell pepper. Sauté for 3-4 minutes until softened.
  3. Stir in minced garlic and cook for another 30 seconds.
  4. Add tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard, smoked paprika, salt, and black pepper. Stir to combine.
  5. Optional: Add frozen corn or peas. Simmer the mixture for 5-7 minutes, stirring occasionally, until thickened. Taste and adjust seasoning as needed.
  6. Preheat oven to 400°F (200°C). Grease a 9×13-inch casserole dish with nonstick spray or butter.
  7. Pour the Sloppy Joe mixture into the greased casserole dish and spread evenly.
  8. In a mixing bowl, combine Cheddar Bay biscuit mix, shredded cheddar cheese, and dried parsley or chives. Stir in cold water until just combined; do not overmix.
  9. Drop spoonfuls of biscuit dough over the Sloppy Joe mixture, spacing evenly. It’s okay if some filling peeks through.
  10. Pour melted butter over the biscuit topping. Sprinkle extra shredded cheese if desired.
  11. Bake at 400°F for 20-25 minutes, or until biscuits are golden brown and filling is bubbling.
  12. Remove from oven and let cool for 5-10 minutes before serving. Garnish with extra parsley or chives if desired.

For gluten-free, use GF biscuit mix and sauces. For dairy-free, use vegan cheese and butter. Brown the meat well for extra flavor, and don’t overmix the biscuit dough. Let the casserole rest before serving for best texture. Leftovers reheat well and can be frozen for up to 2 months.
