These bite-sized snacks feature tender chicken, crispy bacon, ranch seasoning, and gooey cheese wrapped in golden crescent dough. Quick to make and always a crowd-pleaser, they’re perfect for parties, potlucks, or cozy nights in.

  • 2 cups cooked chicken, shredded (rotisserie chicken recommended)
  • 6 slices bacon, cooked and crumbled (thick-cut or turkey bacon)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons ranch seasoning mix
  • 2 tablespoons cream cheese, softened (optional, but recommended)
  • 12 tablespoons fresh chives or green onions, chopped
  • Freshly ground black pepper, to taste
  • 2 tubes refrigerated crescent roll dough (8 ounces each)
  • 1 tablespoon melted butter (for brushing)
  • 1 teaspoon garlic powder (optional)
  • Extra ranch dressing (for dipping, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, combine shredded chicken, crumbled bacon, cheddar cheese, mozzarella cheese, ranch seasoning, cream cheese, chives or green onions, and black pepper. Mix until evenly combined.
  3. Open crescent roll tubes and separate dough into triangles. If dough tears, pinch it back together.
  4. Place about 1 heaping tablespoon of filling onto the wide end of each crescent triangle. Roll up the dough from the wide end and tuck ends underneath to seal.
  5. Arrange filled crescent bites about 2 inches apart on the prepared baking sheet. Brush each bite with melted butter and sprinkle with garlic powder if using.
  6. Bake for 14–16 minutes, or until crescents are golden brown and cheese is bubbling at the edges. Check at 12 minutes if your oven runs hot.
  7. Let bites cool for 3–5 minutes before serving. Transfer to a platter and serve warm with ranch dressing for dipping.

Notes

Do not overfill the crescents to prevent bursting and cheese leakage. Seal edges tightly. Use room temperature ingredients for a creamier filling. Shred your own cheese for best melt. For gluten-free, use gluten-free crescent dough. Filling can be prepped ahead and refrigerated. Bites can be frozen and reheated in the oven.
