A fusion of taco-seasoned beef, gooey melted cheese, and comforting baked lasagna, this casserole is perfect for family dinners, potlucks, or game nights.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa (mild, medium, or hot)
  • 68 flour tortillas (or corn tortillas for gluten-free)
  • 8 oz cream cheese
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 can refried beans (15 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 2 green onions, chopped (optional)
  • 1/4 cup sliced black olives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with cooking spray.
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spatula as it cooks (about 6-8 minutes). Drain excess grease if needed.
  3. Add the taco seasoning and diced tomatoes with green chilies to the skillet. Stir well and let simmer for 3-4 minutes until thickened. Remove from heat.
  4. In a mixing bowl, combine the cream cheese and 1 cup of shredded cheese. Stir until smooth and creamy.
  5. Begin layering the casserole: Place a layer of tortillas on the bottom of the baking dish, cutting them to fit if necessary.
  6. Spread half of the refried beans over the tortillas, followed by half of the meat mixture. Then add a layer of the cream cheese mixture and a sprinkle of shredded cheese.
  7. Repeat the layers until all ingredients are used, finishing with a layer of tortillas topped with shredded cheese.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Let the casserole cool for 5 minutes before slicing. Garnish with green onions, olives, or your favorite taco toppings.
