  • 4 large Vidalia onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 large eggs, beaten
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese (sharp cheddar recommended)
  • ½ cup breadcrumbs
  • Salt, to taste
  • Pepper, to taste
  • Optional: ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Heat the butter in a large skillet over medium heat. Add the sliced Vidalia onions and sauté for 15-20 minutes, stirring occasionally, until golden and soft. Season with a pinch of salt and pepper.
  3. In a mixing bowl, whisk together the eggs, heavy cream, and a dash of salt and pepper. Set aside.
  4. Spread the caramelized onions evenly at the bottom of the greased baking dish. Pour the creamy mixture over the onions.
  5. Sprinkle the shredded cheddar cheese generously over the top. If using Parmesan, sprinkle it on here as well.
  6. Evenly distribute the breadcrumbs over the cheese for a crispy, golden finish.
  7. Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
  8. Let the casserole rest for 5-10 minutes before serving to allow the layers to set.
