Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup milk (whole milk or non-dairy alternative)
  • 1 cup cherries, pitted and halved
  • 1/3 cup all-purpose flour (for streusel topping)
  • 1/3 cup brown sugar (for streusel topping)
  • 1/4 cup cold butter, cubed (for streusel topping)
  • 1/4 cup sliced almonds (for streusel topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Prepare the streusel topping: In a small bowl, combine 1/3 cup of all-purpose flour, 1/3 cup of brown sugar, and 1/4 cup of cold, cubed butter. Mix until it resembles coarse crumbs. Stir in 1/4 cup of sliced almonds and set aside.
  3. In a large mixing bowl, whisk together 1 1/2 cups of all-purpose flour, 1/2 cup of almond flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  4. In a separate bowl, whisk together 1/2 cup of melted butter, 2 large eggs, 1/2 cup of granulated sugar, 1 teaspoon of vanilla extract, 1/2 teaspoon of almond extract, and 1/2 cup of milk until smooth.
  5. Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined. Fold in 1 cup of pitted, halved cherries.
  6. Evenly distribute the batter among the 12 muffin cups, filling each about 2/3 full. Sprinkle the streusel topping generously over each muffin.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. Serve warm or at room temperature.

Notes

[‘Don’t overmix the batter to avoid dense muffins.’, ‘If using frozen cherries, thaw and pat them dry to prevent excess moisture.’, ‘Keep the streusel topping cold for a crumbly texture.’, ‘Test for doneness with a toothpick; it should come out clean or with a few crumbs.’]
