  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving a slight overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl and let it cool slightly.
  3. In a large mixing bowl, whisk together the melted butter, light brown sugar, granulated sugar, egg, vanilla extract, and mashed bananas until smooth.
  4. In a separate bowl, sift the all-purpose flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients using a spatula.
  5. Gently stir in the chocolate chunks, ensuring they’re evenly distributed throughout the batter.
  6. Pour the batter into the prepared baking pan, spreading it out evenly with the spatula.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Be careful not to overbake!
  8. Remove the pan from the oven and let the blondies cool in the pan for about 15 minutes. Then lift them out using the parchment paper and transfer to a cooling rack.
  9. Once cooled, cut into squares and enjoy!
