This easy, no-bake snack mix combines crispy Chex cereal with white chocolate, cinnamon sugar, and a sweet icing drizzle for all the flavors of a cinnamon roll in a crunchy, addictive treat. Perfect for parties, movie nights, or gifting, it’s ready in under 20 minutes and always a crowd-pleaser.

  • 6 cups Rice Chex cereal (about 160g)
  • 1 cup white chocolate chips (170g)
  • 2 tablespoons cream cheese, softened (about 28g)
  • 1 1/2 cups powdered sugar (180g)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted (about 28g)
  • Pinch of salt
  • Optional: 1/4 cup mini cinnamon chips (about 40g)
  • For the Drizzle:
  • 1/2 cup powdered sugar (60g)
  • 1 tablespoon milk (15ml)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Line a baking sheet with parchment paper and set aside. Pour Chex cereal into a large mixing bowl.
  2. In a microwave-safe bowl, combine white chocolate chips, butter, and cream cheese. Microwave in 30-second bursts, stirring between each, until smooth and melted (about 1 1/2–2 minutes total). Stir in vanilla extract and a pinch of salt.
  3. Pour the melted chocolate mixture over the Chex cereal. Gently fold with a rubber spatula until every piece is evenly coated.
  4. In a separate bowl, whisk together powdered sugar and ground cinnamon. If using mini cinnamon chips, add them now.
  5. Transfer the coated cereal into a large zip-top bag. Pour in the cinnamon sugar mix, seal the bag, and shake until every piece is covered.
  6. Pour the puppy chow onto your parchment-lined baking sheet. Spread into an even layer to cool and set for about 5–10 minutes.
  7. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled puppy chow with a spoon or fork.
  8. Allow the icing to firm up—5 minutes at room temp or a quick chill in the fridge. Break apart any large clumps and serve.

Notes

Use fresh cinnamon for best flavor. Melt white chocolate gently to avoid scorching. Let cream cheese come to room temperature for smooth mixing. For gluten-free or dairy-free, use appropriate substitutes. Cool puppy chow completely before storing to keep it crisp. For bigger clusters, don’t over-mix in the bag. Add nuts, raisins, or swap cereals for fun variations.
