Ingredients

Scale
  • 3 medium firm apples (such as Granny Smith, Honeycrisp, or Fuji, about 1.3 lbs/600g)
  • 1/4 cup all-purpose flour (30g, or gluten-free flour as needed)
  • 2 tablespoons cornstarch (16g)
  • 2 teaspoons ground cinnamon (4g), divided
  • 3 tablespoons granulated sugar (38g, or coconut sugar/maple sugar as substitute), divided
  • Pinch of salt (about 1g)
  • Neutral oil spray (such as canola or avocado oil)
  • 1 tablespoon lemon juice (optional, to prevent browning)

Instructions

  1. Wash and dry apples. Cut into wedges, then slice each wedge into fry-shaped sticks about 1/2-inch thick. Toss with lemon juice if desired.
  2. In a medium bowl, combine flour, cornstarch, 1 teaspoon cinnamon, and a pinch of salt. Stir to blend.
  3. Add apple sticks to the bowl and toss to coat evenly. Shake off excess flour mixture.
  4. In a small bowl, mix 2 tablespoons sugar with 1 teaspoon cinnamon. Set aside.
  5. Lightly spray air fryer basket with oil. Arrange coated apple fries in a single layer (do not overcrowd).
  6. Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway, until golden and slightly crisp at the edges.
  7. Transfer hot fries to a bowl and immediately sprinkle with cinnamon sugar. Toss gently to coat.
  8. Serve warm for maximum crunch. If making ahead, keep warm in a low oven (200°F/95°C) until serving.

Notes

For best results, use firm, crisp apples and avoid overcrowding the air fryer basket. Toss fries with cinnamon sugar while hot for best coating. To make gluten-free, use a gluten-free flour blend or almond flour. For extra crunch, add a tablespoon of panko to the dry coating. Serve immediately for maximum crispiness; leftovers can be re-crisped in the air fryer.
