  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, diced (optional)
  • 2 garlic cloves, minced
  • ½ cup (120ml) ketchup
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon mustard
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons (60g) butter
  • 8 thick slices Texas toast

Instructions

  1. Finely chop the yellow onion, dice the green bell pepper (if using), and mince the garlic cloves. Set aside the Texas toast slices for toasting later.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring and breaking it apart, until no longer pink and browned evenly, about 6-8 minutes.
  3. Drain excess fat if necessary. Add the chopped onion and bell pepper to the skillet and cook until softened and fragrant, about 4-5 minutes. Add the minced garlic and cook for another 30 seconds to 1 minute.
  4. Stir in ketchup, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, and mustard. Mix well and reduce heat to medium-low. Simmer gently for 5-7 minutes, stirring occasionally until the sauce thickens and coats the beef.
  5. Season with salt and freshly ground black pepper to taste. Adjust sweetness or tang by adding more brown sugar or Worcestershire sauce if desired.
  6. While the filling simmers, melt butter in a clean skillet over medium heat. Butter one side of each Texas toast slice and place buttered side down in the pan. Toast until golden brown and crispy, about 2-3 minutes per side.
  7. Assemble by piling the sloppy joe mixture generously over each slice of Texas toast. Serve immediately while warm and juicy. Optional: add pickles or cheese on top.

Notes

Toast the bread just before serving to prevent sogginess. Don’t overload the toast with filling to keep it crispy. Brown the meat well for better flavor. Simmer sauce gently to meld flavors.
