These cozy apple pie bars combine the comforting flavors of classic apple pie with a buttery streusel topping in an easy-to-make, sliceable bar perfect for sharing or quick treats.

  • 2 ½ cups all-purpose flour (315 g)
  • ½ cup granulated sugar (100 g)
  • ½ cup packed brown sugar (110 g)
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 cup unsalted butter, cold and cubed (227 g)
  • About 4 medium apples (3 cups peeled and sliced, 450 g) – Granny Smith or Honeycrisp recommended
  • 1 tablespoon lemon juice
  • ¼ cup granulated sugar (50 g)
  • ¼ cup brown sugar (55 g)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or line it with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, and salt. Add cold cubed butter and cut it into the dry ingredients using a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized bits.
  3. Reserve about 1 ½ cups of this crumb mixture for the streusel topping. Press the remaining mixture evenly into the bottom of the prepared pan to form the crust. Bake the crust for 15 minutes until it just begins to set and is lightly golden.
  4. While the crust bakes, peel, core, and slice apples into thin, even slices (about ⅛-inch thick). Toss with lemon juice, then add granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Stir until apples are evenly coated.
  5. Remove the crust from the oven and spread the apple mixture evenly over it, distributing the juices as well.
  6. Sprinkle the reserved streusel topping evenly over the apples without pressing down.
  7. Bake for an additional 40-45 minutes until the topping is golden brown and the apple filling bubbles gently around the edges. If topping browns too fast, loosely cover with foil halfway through baking.
  8. Remove from oven and cool completely on a wire rack to allow filling to set.
  9. Slice into bars and serve warm, at room temperature, or chilled.

Notes

Use gluten-free flour blend to make gluten-free. For dairy-free, substitute butter with vegan margarine or coconut oil. Adding ½ cup chopped walnuts or pecans to streusel adds crunch. To prevent soggy crust, bake crust first. Thinly slice apples for even cooking. If topping browns too fast, cover with foil halfway through baking. Let bars cool completely before slicing for clean cuts.
