  • 2 cups cooked, shredded chicken breast
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 ounces canned crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup small pasta shapes (ditalini or macaroni)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot over medium heat.
  2. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the crushed tomatoes and chicken broth, then add the Italian seasoning, salt, and pepper. Stir to combine.
  4. Bring the mixture to a gentle boil, then reduce to a simmer. Let it cook for 10 minutes to allow the flavors to meld.
  5. Add the cooked, shredded chicken to the pot and stir well.
  6. Stir in the pasta and cook until tender, about 8-10 minutes (check the package directions for exact timing).
  7. Once the pasta is cooked, lower the heat and stir in the shredded mozzarella cheese until melted and creamy.
  8. Ladle the soup into bowls and top with grated parmesan cheese and freshly chopped parsley.
