Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups chicken broth, preferably low sodium
  • 1 cup sweet corn kernels, fresh or frozen
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 12 chipotle peppers in adobo sauce, minced
  • 1 tbsp adobo sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Juice of 1 lime
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 45 corn tortillas, cut into strips and toasted separately
  • A handful cilantro, chopped (optional)
  • Shredded cheese like Monterey Jack or cheddar (optional)
  • Avocado slices (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced onion and cook until softened and translucent, about 5 minutes. Add minced garlic and cook for 1 more minute until fragrant. Transfer mixture to the slow cooker.
  2. Add chicken breasts or thighs on top of the onion and garlic. Pour in fire-roasted diced tomatoes with juice, black beans, corn kernels, chicken broth, cumin, chili powder, minced chipotle peppers, and adobo sauce. Stir gently to distribute spices without shredding the chicken.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and cooked through.
  4. Remove chicken pieces and shred with two forks. Return shredded chicken to the slow cooker and stir well.
  5. Stir in fresh lime juice and season with salt and black pepper to taste. Adjust chipotle or chili powder for desired heat.
  6. Cut corn tortillas into ½ inch strips. Toast in a hot dry skillet for 2-3 minutes, turning frequently until crisp and golden, or bake at 375°F (190°C) for 8-10 minutes.
  7. Ladle soup into bowls and garnish with crispy tortilla strips, chopped cilantro, shredded cheese, and avocado slices if desired.

Notes

Do not add tortilla strips to the slow cooker during cooking to keep them crisp. Use chicken thighs for juicier meat. Toast tortillas separately. For thicker soup, mash some beans before adding shredded chicken. Adjust chipotle peppers to control heat. Use shredded rotisserie chicken to reduce cooking time.
