Instructions

  1. Peel and slice the peaches into about 1/2-inch thick slices. Toss them in a large bowl with granulated sugar, brown sugar, cinnamon, vanilla extract, lemon juice, and cornstarch. Stir gently to coat all the slices evenly. Set aside for 10 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. Pour the peach mixture with all the juices into a greased 9-inch baking dish. Spread it out evenly.
  4. In a medium bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt. Add the cold, cubed butter and cut it into the flour mixture until it resembles coarse crumbs with pea-sized bits of butter.
  5. Pour in the milk or buttermilk and stir gently with a wooden spoon until just combined. Avoid overmixing.
