Creamy Avocado Deviled Eggs Recipe with Everything Bagel Seasoning

A modern twist on classic deviled eggs featuring a creamy avocado filling and a sprinkle of everything bagel seasoning for a fresh, bold flavor. Perfect for quick snacks or brunch gatherings.

  • 6 large eggs, hard-boiled and peeled (12 halves)
  • 1 medium ripe avocado, peeled and pitted
  • 2 tablespoons mayonnaise
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 2 teaspoons everything bagel seasoning (or homemade blend of sesame seeds, poppy seeds, dried garlic, onion flakes, and coarse salt)
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: fresh chives or dill, finely chopped

Instructions

  1. Place 6 large eggs in a medium pot and cover with cold water by about an inch. Bring to a boil over medium-high heat, then reduce heat to low and simmer gently for 10 minutes.
  2. Immediately transfer the eggs to an ice bath to cool for 5 minutes to stop cooking and make peeling easier.
  3. Gently tap the eggs on a hard surface and peel off the shells. Rinse any stubborn bits under cold water.
  4. Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Arrange the egg whites on a serving platter.
  5. Add the ripe avocado, mayonnaise, lemon juice, and Dijon mustard to the bowl with the yolks. Use a fork or potato masher to blend everything until smooth and creamy. Taste and season with salt and pepper.
  6. Spoon the avocado-yolk mixture into the hollow of each egg white half. For a neater look, use a piping bag or a plastic bag with a corner cut off to pipe the filling in.
  7. Sprinkle each egg with about 1/3 teaspoon of everything bagel seasoning evenly.
  8. Garnish with fresh chives or dill if desired. Serve fresh or refrigerate up to 24 hours.

Notes

Use very fresh eggs for easier peeling. Add a teaspoon of water or extra lemon juice if the avocado filling is too thick. Sprinkle everything bagel seasoning just before serving to keep it crunchy. Store filled eggs in an airtight container with plastic wrap pressed on the filling to minimize browning. Best served chilled and eaten within 24 hours.
