  • 4 cups broccoli florets (fresh or frozen, thawed and drained)
  • 2 cups shredded sharp cheddar cheese (about 200g)
  • 4 ounces cream cheese, softened
  • 1 cup sour cream (240ml)
  • 1/2 cup milk (whole or 2%)
  • 4 tablespoons butter, divided
  • 2 tablespoons all-purpose flour
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup panko breadcrumbs (about 60g)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the broccoli: wash and cut fresh broccoli into bite-sized florets or thaw and drain frozen broccoli.
  3. In a medium saucepan, melt 2 tablespoons butter over medium heat. Whisk in the flour and cook for 1-2 minutes to remove raw flour taste.
  4. Slowly whisk in the milk, stirring constantly until the sauce thickens, about 3-4 minutes.
  5. Remove from heat and stir in softened cream cheese until smooth.
  6. Add sour cream, onion powder, garlic powder, salt, and pepper. Stir to combine.
  7. Fold in shredded cheddar cheese until melted and creamy.
  8. In a large bowl, toss the broccoli florets with the cheese sauce until evenly coated.
  9. Transfer the mixture to a 9×13-inch baking dish and spread evenly.
  10. Melt the remaining 2 tablespoons butter. In a small bowl, mix melted butter with panko breadcrumbs and Parmesan cheese (if using).
  11. Sprinkle the crumb topping evenly over the casserole.
  12. Bake uncovered for 25-30 minutes until the topping is golden brown and the casserole is bubbly.
  13. Let the casserole cool for 5-10 minutes before serving.

Notes

If topping browns too fast, cover loosely with foil halfway through baking. If sauce is too thick before baking, whisk in a splash more milk. For gluten-free, substitute flour and breadcrumbs with gluten-free versions. For extra cheesy casserole, sprinkle additional cheddar on top before crumb topping.
