  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • For the frosting:
  • 1/4 cup (57g) butter, softened
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 1 teaspoon instant espresso powder dissolved in 1 tablespoon hot water
  • 12 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the melted unsalted butter and granulated sugar until smooth and glossy, about 2 minutes.
  3. Add the eggs one at a time, whisking thoroughly after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the all-purpose flour, unsweetened cocoa powder, instant espresso powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined. Do not overmix.
  6. Pour the batter into the prepared pan and spread evenly with a spatula.
  7. Bake for 30-35 minutes. Insert a toothpick in the center after 30 minutes; it should come out with a few moist crumbs but not wet batter.
  8. Cool completely on a wire rack before frosting.
  9. To make the frosting, beat the softened butter until creamy (1-2 minutes). Gradually add powdered sugar and continue beating.
  10. Add dissolved espresso powder and vanilla extract to the frosting. Beat in heavy cream, 1 tablespoon at a time, until light, fluffy, and spreadable.
  11. Spread the frosting evenly over the cooled brownies using an offset spatula or the back of a spoon.
  12. Let the frosting set for at least 20 minutes before slicing into squares.
