  • ½ cup (1 stick) unsalted butter, softened (113 grams) for buttercream
  • 2 ½ cups powdered sugar, sifted (300 grams)
  • 1 teaspoon vanilla extract for buttercream
  • 23 tablespoons heavy cream or whole milk (3045 ml)
  • 2 tablespoons rainbow sprinkles (30 grams), plus extra for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat 1 cup softened unsalted butter, granulated sugar, and light brown sugar on medium speed for about 3 minutes until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Beat in softened cream cheese until smooth.
  6. Slowly add the flour mixture to the wet ingredients, mixing on low speed just until combined.
  7. Gently fold in ½ cup rainbow sprinkles.
  8. Pour batter into prepared pan and spread evenly.
  9. Bake for 28-32 minutes until edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs.
  10. Cool bars completely in the pan on a wire rack for at least 45 minutes.
  11. To make buttercream, beat ½ cup softened butter on medium speed until creamy.
  12. Gradually add powdered sugar, mixing well.
  13. Add vanilla extract and 2-3 tablespoons heavy cream, adjusting for a fluffy, spreadable consistency.
  14. Fold in 2 tablespoons sprinkles gently.
  15. Spread buttercream evenly over cooled bars.
  16. Sprinkle extra rainbow sprinkles on top.
  17. Chill bars for 20-30 minutes to set frosting before slicing into squares using the parchment overhang.

Notes

Use softened but not melted butter and cream cheese for best texture. Do not overmix flour to keep bars tender. Use parchment paper for easy removal. Chill bars before frosting to prevent melting. If buttercream is too stiff, add more cream; if too loose, add more powdered sugar. Fold sprinkles in gently to avoid color bleeding.
