  • ½ teaspoon vanilla extract

Instructions

  1. Measure and prepare ingredients: scoop 1 cup (225g) of cottage cheese into a mixing bowl. Measure honey, fresh berries, nuts, and vanilla extract.
  2. Add ½ teaspoon vanilla extract and 1 tablespoon (21g) honey over the cottage cheese. Stir gently to combine without making the mixture watery.
  3. Optional: pulse the mixture in a food processor or blender for 10-15 seconds for a smoother texture, keeping some curd texture.
  4. Gently fold in ½ cup (75g) fresh berries. If using frozen berries, thaw and drain excess juice first.
  5. Sprinkle 2 tablespoons (15g) chopped nuts on top. Optionally toast nuts lightly in a dry pan over medium heat for 2 minutes.
  6. Taste and adjust sweetness or add a sprinkle of cinnamon if desired.
  7. Serve immediately. Refrigerate leftovers covered for up to 24 hours; stir before serving if thickened.
