  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 (14.5 oz) can diced tomatoes (fire-roasted preferred)
  • 4 cups chicken broth (low-sodium preferred)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 12 chipotle peppers in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 4 oz cream cheese, softened
  • ½ cup heavy cream (optional)
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Tortilla strips for topping

Instructions

  1. If using raw chicken breasts, poach 2 boneless, skinless breasts in simmering water for about 15 minutes until cooked through. Let cool and shred. Alternatively, use pre-cooked rotisserie chicken.
  2. Heat olive oil in a large pot over medium heat. Add chopped onion and cook for 5 minutes until translucent. Add minced garlic and cook for 1 more minute until fragrant.
  3. Stir in cumin, chili powder, and minced chipotle peppers. Cook for 30 seconds to toast spices.
  4. Add canned diced tomatoes with juices and chicken broth. Stir and bring to a gentle simmer.
  5. Add black beans, corn kernels, and shredded chicken. Simmer uncovered for 15 minutes, stirring occasionally.
  6. Lower heat to medium-low. Add cream cheese in cubes, stirring continuously until melted and smooth. If using, add heavy cream and stir to combine.
  7. Season with salt and pepper to taste. Stir in fresh lime juice and remove from heat. Sprinkle chopped cilantro on top.
  8. Serve hot, garnished with crunchy tortilla strips and additional cilantro or sour cream if desired.

Notes

Add lime juice at the end to preserve brightness. Melt cream cheese slowly over low heat to avoid clumps. Adjust chipotle peppers to control spice level. If soup is too thick, add more broth or water. For smoother texture, blend half the soup before adding cream cheese.
