  • 1 teaspoon (5ml) vanilla extract
  • 6 ounces (170g) white chocolate chips or melting wafers
  • 1 tablespoon (15ml) coconut oil (optional, for thinning chocolate)
  • Optional toppings: finely chopped pistachios, shredded coconut, or rainbow sprinkles

Instructions

  1. Wash and dry 2 cups (300g) of seedless grapes thoroughly. Pat them completely dry to help the cream cheese mixture stick better.
  2. In a mixing bowl, beat 4 ounces (115g) softened cream cheese with 2 tablespoons (30ml) honey and 1 teaspoon (5ml) vanilla extract using a hand mixer or whisk until smooth and fluffy, about 2-3 minutes.
  3. Using a spoon or your fingers, gently roll each grape in the cream cheese mixture until fully covered. Place coated grapes on a parchment-lined baking sheet.
  4. Insert a wooden skewer or popsicle stick into each coated grape cluster or individual grape. Transfer the tray to the freezer and freeze for at least 2 hours or until firm.
  5. In a microwave-safe bowl, combine 6 ounces (170g) white chocolate chips and 1 tablespoon (15ml) coconut oil. Heat in 20-second bursts, stirring after each, until smooth and glossy.
  6. Remove grapes from the freezer one at a time and quickly dip them into the melted white chocolate, letting excess drip off. Sprinkle optional toppings immediately after dipping if desired.
  7. Place dipped popsicles back onto the parchment-lined tray and freeze for another 30 minutes to set the chocolate coating completely.
  8. Serve chilled immediately or store in an airtight container in the freezer for up to a week.
