  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 34 garlic cloves, minced
  • 3/4 cup heavy cream (180 ml)
  • 1/2 cup freshly grated Parmesan cheese (50 g)
  • 1/2 cup chicken broth (120 ml)
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning.
  2. Heat a 10-inch skillet over medium-high heat and add olive oil. Heat until shimmering but not smoking, about 2 minutes.
  3. Add chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tented with foil.
  4. Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant but not browned.
  5. Pour in chicken broth and heavy cream, stirring to combine. Let simmer gently for 3-4 minutes, stirring occasionally, until slightly thickened.
  6. Gradually sprinkle in freshly grated Parmesan while stirring. Continue simmering for another 2-3 minutes until sauce is thick, creamy, and smooth.
  7. Return chicken breasts to the skillet, spoon sauce over them, and simmer together for 2 more minutes to warm through and meld flavors.
  8. Taste sauce and adjust seasoning with salt and pepper if needed. Sprinkle chopped fresh parsley on top before serving.

Notes

Use freshly grated Parmesan for best melt and flavor. If sauce gets too thick, add a splash more broth or cream to loosen. Do not overcrowd the pan when searing chicken. Let chicken rest after searing to keep it juicy. Keep heat medium or medium-low when cooking sauce to avoid curdling or burning garlic. A squeeze of fresh lemon juice before serving brightens the sauce.
