  • 1/2 cup (115g) unsalted butter, softened
  • 8 oz (225g) cream cheese, softened
  • 3 to 4 cups (360-480g) powdered sugar, sifted
  • 2 tablespoons molasses
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Soften the butter and cream cheese by leaving them out of the fridge for about 30 minutes until soft but not melted.
  2. In a mixing bowl, beat the butter and cream cheese on medium speed for 2-3 minutes until smooth and creamy with no lumps.
  3. Add molasses and vanilla extract, then beat for another 30 seconds to combine.
  4. In a small bowl, whisk together ground ginger, cinnamon, nutmeg, cloves, and salt.
  5. With the mixer on low speed, gradually add sifted powdered sugar one cup at a time, beating briefly after each addition until combined. After 3 cups, taste and add more sugar if desired.
  6. Increase mixer speed to medium-high and beat for 1-2 minutes to lighten the texture and make the frosting fluffy.
  7. Check the consistency and flavor; adjust spices or sugar as needed.
  8. If frosting is too soft, chill in the refrigerator for 15-20 minutes before using. If too thick after chilling, let sit at room temperature for 10 minutes and remix.

Softening butter and cream cheese properly is essential to avoid lumps or runny frosting. Sift powdered sugar to keep frosting smooth. Chill frosting to firm up for piping. Adjust spice levels and sweetness to taste. For dairy-free version, use plant-based cream cheese and butter alternatives.
