A creamy, spicy jalapeño popper dip topped with crispy bacon, perfect for parties and game days. Easy to make and a crowd-pleaser with a rich, cheesy base and smoky crunch.

Ingredients

Scale
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (120 ml) sour cream
  • 1/4 cup (60 ml) mayonnaise
  • 2 medium jalapeños, seeded and finely chopped
  • 1 cup (115 g) sharp cheddar cheese, shredded
  • 1/4 cup (25 g) Parmesan cheese, grated
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • 1/4 teaspoon black pepper
  • 6 slices bacon, cooked until crispy and crumbled

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon: Place 6 slices of bacon in a cold skillet and cook over medium heat, flipping occasionally, until crispy (about 8-10 minutes). Transfer to paper towels to drain and cool, then crumble into bite-sized pieces. Alternatively, bake bacon on a foil-lined tray at 400°F (200°C) for 15-20 minutes.
  3. Prepare the jalapeños: Wearing gloves, cut off stems, slice in half, remove seeds for mild heat (or leave some for more kick), then finely chop.
  4. Mix the creamy base: In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Use an electric mixer or whisk until smooth, about 2 minutes.
  5. Add the cheeses and seasonings: Stir in shredded sharp cheddar, grated Parmesan, garlic powder, onion powder, black pepper, and salt to taste. Fold gently.
  6. Incorporate the jalapeños: Fold in the chopped jalapeños evenly.
  7. Transfer to baking dish: Spread the mixture evenly in an 8×8-inch (20×20 cm) baking dish.
  8. Top with crispy bacon: Sprinkle the crumbled bacon generously over the top.
  9. Bake for about 20-25 minutes, or until the edges are bubbling and the bacon is crisp and golden.
  10. Let it cool slightly before serving, about 5 minutes to thicken and make scooping easier.

Notes

Soften cream cheese before mixing for smooth texture. Handle jalapeños with gloves to avoid irritation. Cook bacon slowly over medium heat for maximum crispiness. Let dip rest after baking for easier scooping. For a golden top, broil 1-2 minutes at the end but watch carefully to prevent burning. Can prepare dip mixture a day ahead and add bacon topping before baking.
