  • 1 cup chicken broth (240 ml; homemade or low-sodium store-bought)
  • 3/4 cup heavy cream (180 ml)
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt, pepper, and dried Italian herbs. (5 minutes)
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When shimmering hot, add chicken breasts and cook until golden brown, about 5 minutes per side. Remove chicken and set aside. (10-12 minutes)
  3. Reduce heat to medium. Add 2 tablespoons butter to the skillet. When melted, add minced garlic and chopped sun-dried tomatoes. Stir frequently for 1-2 minutes until fragrant but not browned. (2 minutes)
  4. Pour in 1 cup chicken broth, scraping the bottom of the pan to loosen browned bits. Let simmer for 3-4 minutes to reduce slightly. (4 minutes)
  5. Stir in 3/4 cup heavy cream and 1/3 cup grated Parmesan cheese. Reduce heat to low and simmer gently, stirring until sauce thickens and becomes silky, about 5-7 minutes. Add red pepper flakes if desired. (7 minutes)
  6. Return the seared chicken to the sauce. Spoon sauce over the top. Cover loosely and simmer on low for another 5 minutes to let flavors meld and chicken finish cooking. (5 minutes)
  7. Just before serving, stir in chopped fresh basil. Taste and adjust salt and pepper as needed.

Pat chicken dry before seasoning to ensure good sear. Use oil-packed sun-dried tomatoes for best flavor or soak dry ones in warm water. Adjust sauce thickness by adding broth or cream as needed. Boneless skinless chicken thighs can be used for juicier results with slightly longer cooking time.
