A quick and easy homemade shamrock shake with creamy vanilla ice cream, refreshing mint extract, and bursts of mini chocolate chips. Perfect for St. Patrick’s Day or any time you want a festive, minty treat.

Ingredients

Scale
  • 2 cups (480 ml) vanilla ice cream, preferably full-fat
  • 1 cup (240 ml) whole milk (can substitute almond or oat milk for dairy-free)
  • 1 teaspoon pure peppermint extract
  • 35 drops green food coloring (optional)
  • 1/4 cup (45 grams) mini chocolate chips, semi-sweet or dark
  • Whipped cream for topping (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Gather your ingredients.
  2. Add 2 cups vanilla ice cream and 1 cup whole milk to the blender. Blend on medium speed for 20-30 seconds until smooth but thick.
  3. Add 1 teaspoon peppermint extract and blend for 10 seconds to combine. Start with half a teaspoon if unsure, then add more after tasting.
  4. Add 3-5 drops green food coloring if desired and pulse briefly until color is even.
  5. Remove blender lid and gently fold in 1/4 cup mini chocolate chips with a spoon to keep them intact.
  6. Pour the shake into tall serving glasses.
  7. Top with whipped cream and garnish with extra chocolate chips or fresh mint leaves.

Notes

Let ice cream soften for 5 minutes before blending for best texture. Fold in chocolate chips at the end to prevent sinking. Adjust mint extract carefully to avoid overpowering flavor. For a thicker shake, add more ice cream; for thinner, add more milk. Freeze glasses ahead for a colder shake. Can be made dairy-free or low-sugar with substitutions.
