  • ¼ cup (50 g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until crumbs are evenly coated and hold together when pressed.
  2. Press crumb mixture into the bottom of a 9-inch springform pan firmly and evenly. Bake for 8 minutes, then remove and let cool completely.
  3. In a medium saucepan over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 8-10 minutes until apples soften but hold shape.
  4. Stir in cornstarch slurry and cook for 1-2 minutes until thickened. Remove from heat and cool to room temperature.
  5. In a large bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract; beat until combined.
  6. In a separate chilled bowl, whip cold heavy cream until stiff peaks form.
  7. Gently fold whipped cream into cream cheese mixture until fluffy.
  8. Pour half the cheesecake filling over cooled crust and spread evenly.
  9. Spoon half the cooled apple pie topping over filling and smooth gently.
  10. Layer remaining cheesecake filling on top, then finish with remaining apple topping.
  11. Cover and refrigerate for at least 4 hours, preferably overnight, to set.

Allow cream cheese to soften at room temperature for 30 minutes to avoid lumps. Cool apple topping completely before assembling to prevent runny filling.
