  • 4 boneless, skinless chicken breasts (68 ounces / 170225 grams each)
  • 2 tablespoons extra virgin olive oil
  • 34 cloves garlic, minced
  • ½ cup packed sun-dried tomatoes, chopped (oil-packed preferred)
  • ½ cup fresh basil, roughly chopped
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) low sodium chicken broth
  • ½ cup freshly grated Parmesan cheese (about 50 grams)
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat 4 boneless, skinless chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Let rest for 5 minutes.
  2. Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. Once shimmering, add the chicken breasts and cook for about 5-6 minutes per side until golden brown and cooked through (internal temperature ~160°F / 71°C). Remove chicken to a plate and tent loosely with foil to keep warm.
  3. Lower heat to medium. In the same pan, add a little more olive oil if needed and sauté minced garlic for about 30 seconds until fragrant but not browned.
  4. Stir in ½ cup chopped sun-dried tomatoes and cook for 1-2 minutes to release their flavor.
  5. Pour in ½ cup chicken broth, scraping the bottom of the pan to loosen browned bits. Let simmer for 2-3 minutes to reduce slightly.
  6. Add 1 cup heavy cream, stir to combine, and bring to a gentle simmer. Add a pinch of red pepper flakes if desired.
  7. Stir in ½ cup freshly grated Parmesan cheese until melted and sauce thickens (about 2-3 minutes). Turn off heat and fold in ½ cup chopped fresh basil.
  8. Nestle the chicken breasts back into the creamy sauce, spoon sauce over each piece, cover with lid, and let sit off heat for 5 minutes to marry flavors and keep chicken tender.
  9. Serve warm, spooning extra sauce over the chicken. Delicious over mashed potatoes, pasta, rice, or alongside a fresh salad.

Notes

Do not rush the searing step to get a golden crust that locks in juices. Avoid burning garlic by lowering heat if necessary. Simmer sauce gently to prevent curdling. Add basil off heat to preserve color and flavor. Let chicken rest covered to keep tender. For dairy-free, substitute heavy cream with full-fat coconut milk and Parmesan with nutritional yeast.
