  • ½ cup sundried tomatoes, chopped (oil-packed preferred)
  • 3 cloves garlic, minced
  • 2 ½ cups chicken broth (600ml)
  • ¾ cup heavy cream (180ml)
  • ½ cup Parmesan cheese, grated (about 50g)
  • 2 tablespoons olive oil
  • A handful fresh basil, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons olive oil in a large deep skillet over medium heat until shimmering (about 2 minutes).
  2. Add minced garlic and sauté for about 1 minute until fragrant and just starting to turn golden, stirring frequently.
  3. Add chopped sundried tomatoes and stir for 30 seconds to release their flavor.
  4. Add 1 cup dry orzo, stirring to coat in oil and tomato mixture. Toast lightly for 2 minutes.
  5. Pour in 2 ½ cups chicken broth and bring to a gentle simmer. Cook uncovered for 10-12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  6. Lower heat and stir in ¾ cup heavy cream and ½ cup grated Parmesan cheese. Cook for 2-3 minutes until sauce is creamy and coats the orzo. Add more broth or cream if sauce is too thick.
  7. Season with salt and pepper to taste. Fold in chopped fresh basil.
  8. Serve warm immediately.
