Creamy One-Pot Roasted Tomato Basil Bisque Recipe with Gruyère Croutons

  • 2 pounds (900g) ripe Roma tomatoes, halved or quartered
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil (extra virgin preferred)
  • Salt and freshly ground black pepper, to taste
  • 1 small yellow onion, finely chopped
  • 1 medium carrot, peeled and diced
  • 2 cups (16 fl oz) vegetable or chicken broth (low-sodium preferred)
  • 1/2 cup (4 fl oz) heavy cream or coconut cream for dairy-free option
  • 1/4 cup (10g) fresh basil leaves, roughly chopped
  • 1 teaspoon sugar
  • 4 slices crusty bread (baguette or sourdough), cut into cubes
  • 1 cup (100g) grated Gruyère cheese
  • 1 tablespoon unsalted butter, melted
  • Freshly ground black pepper, a pinch

Instructions

  1. Preheat oven to 425°F (220°C). Toss halved tomatoes and unpeeled garlic cloves with olive oil, salt, and pepper on a baking sheet, cut sides up. Roast for 25-30 minutes until tomatoes are soft and slightly charred and garlic is golden.
  2. Heat 1 tablespoon olive oil in a large oven-safe pot or Dutch oven over medium heat. Add chopped onion and diced carrot; sauté for about 8 minutes until softened and translucent, stirring occasionally.
  3. Squeeze roasted garlic cloves from skins into the pot. Add roasted tomatoes with any pan juices. Pour in broth and stir in sugar. Bring to a simmer and cook for 10 minutes to meld flavors.
  4. Use an immersion blender to puree the soup until smooth and creamy. Alternatively, blend in batches in a regular blender and return to pot.
  5. Stir in heavy cream and fresh basil. Simmer for an additional 5 minutes. Adjust salt, pepper, and sugar to taste.
  6. Preheat oven to 375°F (190°C). Toss bread cubes with melted butter and a pinch of black pepper. Spread on a baking sheet and sprinkle grated Gruyère cheese over the bread. Bake for 8-10 minutes until croutons are golden and cheese is bubbly.
  7. Ladle hot bisque into bowls and top with Gruyère croutons. Garnish with extra basil leaves and a drizzle of cream if desired.

Notes

Roasting tomatoes and garlic is key for deep flavor. Use an immersion blender for easier blending and less mess. Serve Gruyère croutons immediately to keep them crispy. Adjust seasoning carefully to balance acidity. For vegan version, use coconut cream and vegetable broth, and replace Gruyère with vegan cheese or omit croutons.
