  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 34 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 1 cup chicken broth (low sodium recommended)
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach (about 120g), loosely packed
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat chicken breasts dry and pound to about ½ inch thickness if thick. Season both sides with salt, pepper, and dried Italian herbs.
  2. Heat a large deep skillet over medium heat. Add olive oil and warm until shimmering, about 1-2 minutes.
  3. Add chicken breasts and cook undisturbed for 5-6 minutes until golden brown on the underside. Flip and cook another 4-5 minutes until cooked through (internal temperature 165°F). Remove chicken and set aside covered with foil.
  4. In the same pan, add minced garlic and chopped sun-dried tomatoes. Stir for 1-2 minutes until fragrant, avoiding burning the garlic.
  5. Pour in chicken broth and scrape up browned bits from the pan. Simmer for 2-3 minutes to reduce slightly.
  6. Lower heat to medium-low. Stir in heavy cream and grated Parmesan cheese. Cook gently for 3-4 minutes until sauce thickens.
  7. Add fresh spinach and stir until wilted, about 2 minutes. Season with salt, pepper, and red pepper flakes if using.
  8. Nestle cooked chicken breasts back into the sauce. Spoon sauce over chicken and simmer gently for 2-3 minutes to combine flavors.
  9. Taste and adjust seasoning if needed. Serve hot with extra sauce spooned over the chicken.

Notes

If sauce is too thick, add a splash of chicken broth or cream to loosen. If too thin, simmer uncovered to reduce. Avoid overcrowding the pan when cooking chicken to ensure proper browning. Use medium heat to prevent cream from curdling. Let chicken rest in sauce off heat for a few minutes before serving. Fresh grated Parmesan melts better than pre-grated. For dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
