  • ½ cup milk of choice (120ml) – dairy or plant-based
  • 2 tablespoons Greek yogurt or cream cheese (30g)
  • 1 medium ripe peach, peeled and diced (about 150g)
  • 1 tablespoon maple syrup or honey (15ml)
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • For the cinnamon streusel topping:
  • ¼ cup all-purpose flour or almond flour (30g)
  • 2 tablespoons brown sugar (25g), packed
  • 2 tablespoons unsalted butter, cold and cubed (28g)
  • ¼ teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Prepare the cinnamon streusel topping: In a small bowl, combine flour, brown sugar, ground cinnamon, and salt. Add cold, cubed unsalted butter and use a fork or pastry cutter to blend until mixture resembles coarse crumbs. Set aside in the fridge to keep cold and crisp (about 5 minutes).
  2. Mix the oats base: In a mason jar or container, add rolled oats, milk, cream cheese or Greek yogurt, maple syrup, vanilla extract, and ground cinnamon. Stir until well combined and cream cheese is fully mixed in (about 3 minutes).
  3. Add the peaches: Fold in the diced peach. If peaches are very juicy, drain some juice before adding to prevent watery oats (about 2 minutes).
  4. Top with streusel: Sprinkle a generous layer of chilled cinnamon streusel on top of the oats mixture to keep it crunchy when served.
  5. Refrigerate overnight: Seal the jar or container and place in the fridge for at least 6 hours, preferably overnight, to allow oats to soak and thicken.
  6. Serve and enjoy: In the morning, gently stir if desired or eat as-is with the crunchy streusel topping. Optionally, add fresh peach slices or a dash more cinnamon.

Notes

Use old-fashioned rolled oats for best texture. Keep streusel topping cold to maintain crumbly texture. Drain excess juice from peaches if very juicy to avoid watery oats. For vegan version, use plant-based milk and dairy-free cream cheese or yogurt, and dairy-free butter or coconut oil for streusel. If streusel softens overnight, toast briefly in a dry pan before serving.
