  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream
  • Pinch of salt
  • Optional toppings: chopped peanuts, chocolate shavings, or melted chocolate drizzle

Instructions

  1. Prepare your crust: If using store-bought, set aside at room temperature. If homemade, crush about 24 chocolate sandwich cookies (1 ½ cups crumbs), mix with 5 tablespoons melted unsalted butter, press into a 9-inch pie pan, and chill for 10 minutes.
  2. Beat the cream cheese in a large bowl with an electric mixer until smooth and creamy, about 2-3 minutes.
  3. Add peanut butter and powdered sugar to the cream cheese. Mix on medium speed until fully combined and fluffy, about 2 minutes. Scrape down sides as needed.
  4. Stir in vanilla extract and a pinch of salt to brighten flavors. Mix just to combine.
  5. In a separate chilled bowl, whip cold heavy whipping cream to soft peaks.
  6. Gently fold one-third of the whipped cream into the peanut butter mixture to lighten it, then fold in the remaining cream carefully to keep fluffy texture. Do not overmix.
  7. Spoon the filling into the prepared crust and smooth the top.
  8. Refrigerate the pie for at least 4 hours or overnight to set and meld flavors.
  9. Before serving, add optional toppings like chopped peanuts, chocolate shavings, or a drizzle of melted chocolate.

Use softened cream cheese to avoid lumps. Whip cream to soft peaks only to avoid grainy texture. Fold whipped cream gently to keep airy texture.
