  • 1 (10 oz / 283 g) bag mini marshmallows or about 4 cups (100 g) mini marshmallows
  • 3 tablespoons (42 g) unsalted butter, softened
  • ½ cup (120 ml) pumpkin puree, canned or fresh
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ½ cup (90 g) white chocolate chips or melting wafers
  • About 12 popsicle sticks or lollipop sticks

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat. Have your popsicle sticks ready.
  2. In a large saucepan over medium-low heat, melt 3 tablespoons (42 g) of unsalted butter, about 2-3 minutes, watching closely to avoid browning.
  3. Add 10 oz (283 g) mini marshmallows and stir continuously until fully melted and smooth, about 4-5 minutes.
  4. Remove pan from heat and stir in ½ cup (120 ml) pumpkin puree, 1 teaspoon pumpkin pie spice, 1 teaspoon vanilla extract, and a pinch of salt until creamy and spreadable. Warm briefly if too stiff.
  5. Immediately add 6 cups (180 g) Rice Krispies cereal and gently fold in with a spatula until evenly coated.
  6. Let mixture cool about 5 minutes. With lightly buttered hands, scoop about ¼ cup (60 ml) of mixture and press firmly around a popsicle stick into a rounded square or ball shape. Place on prepared baking sheet. Makes about 12 pops.
  7. Refrigerate pops for at least 30 minutes to firm up.
  8. In a microwave-safe bowl, melt ½ cup (90 g) white chocolate chips in 20-second bursts, stirring between until smooth.
  9. Drizzle melted white chocolate over chilled pops in thin lines. Return to fridge for 15 minutes until drizzle is set.

Notes

If marshmallow mixture cools and stiffens before shaping, gently reheat on very low heat for a few seconds. Use a spray bottle of water or lightly butter hands to prevent sticking. Melt white chocolate slowly in short bursts and stir often to avoid burning. For a glossy drizzle finish, let set at room temperature instead of fridge. Variations include vegan substitutions, adding nuts, or swapping drizzle chocolate type.
