These creamy sausage Rotel crescent rolls are a quick and easy appetizer featuring a savory blend of sausage, cheese, and Rotel tomatoes wrapped in flaky crescent roll dough. Perfect for parties and casual gatherings, they deliver a creamy, spicy, and cheesy bite every time.

  • 1 pound ground sausage (mild or spicy)
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 cans (16 ounces total) refrigerated crescent roll dough
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat. Add ground sausage and cook for 7-8 minutes, breaking it up until fully browned. Drain excess grease if necessary.
  3. Transfer cooked sausage to a mixing bowl. Add softened cream cheese, shredded cheddar cheese, Rotel diced tomatoes and green chilies (drain a bit if desired), garlic powder, onion powder, salt, and pepper. Stir until well combined and creamy.
  4. Open crescent roll dough cans and separate into 16 triangles.
  5. Spoon about 1 to 1.5 tablespoons of the sausage mixture onto the wide end of each crescent triangle.
  6. Roll each triangle from the wide end toward the point, enclosing the filling. Place rolls point side down on a lined baking sheet.
  7. Bake for 12-15 minutes until golden brown and cooked through. Check after 12 minutes to avoid over-browning.
  8. Let rolls cool on the baking sheet for 5 minutes before serving. Garnish with chopped green onions or parsley if desired.

Notes

If filling is too wet, drain Rotel slightly or add more shredded cheese to bind. Roll crescent dough tightly but gently to avoid leaks. Watch rolls closely after 12 minutes to prevent burning. Let rolls rest 5 minutes before serving to set filling. Can be frozen before baking; bake from frozen adding a few extra minutes.
