Tender tortellini in a creamy sauce with savory sausage and vibrant spinach—this quick and easy recipe is the ultimate weeknight comfort food.

Ingredients

Scale
  • 1 package cheese-filled tortellini (fresh or frozen)
  • 1 pound Italian sausage (mild or spicy)
  • 2 cups fresh spinach (baby spinach preferred)
  • 1 cup heavy cream
  • 1 cup chicken broth (low-sodium)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: fresh parsley for garnish

Instructions

  1. Bring a pot of salted water to a boil and cook the tortellini according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Remove the casing from the sausage (if applicable) and crumble it into the skillet. Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1-2 minutes, just until fragrant.
  4. Pour in the chicken broth and heavy cream, scraping up any browned bits from the skillet. Bring the mixture to a gentle simmer.
  5. Stir in the spinach and let it wilt, about 2 minutes.
  6. Sprinkle in the grated Parmesan cheese, stirring until fully melted and the sauce thickens slightly.
  7. Add the cooked tortellini to the skillet, tossing to coat evenly in the sauce. Let everything meld together for 2-3 minutes over low heat.
  8. Taste and season with salt and pepper as needed. Serve warm with a sprinkle of Parmesan and optional parsley for garnish.

Notes

[‘Don’t overcook the tortellini to avoid mushy pasta.’, ‘Use fresh garlic for the best flavor.’, ‘Simmer the sauce gently to prevent separation.’, ‘Freshly grated Parmesan melts better and adds superior flavor.’, ‘Taste as you go to adjust seasoning to your liking.’]
