  • 2 pounds boneless, skinless chicken breasts or thighs
  • 23 fresh jalapeños, seeded and diced
  • 8 ounces cream cheese, softened (full fat preferred)
  • 4 cups low sodium chicken broth
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream or Greek yogurt (optional)
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • A handful fresh cilantro, chopped (optional)
  • Juice of half a lime

Instructions

  1. Dice the jalapeños (remove seeds for less heat), finely chop the onion, and mince the garlic.
  2. Place the chicken breasts or thighs at the bottom of the slow cooker.
  3. Sprinkle the diced onions, jalapeños, and minced garlic evenly over the chicken.
  4. Add smoked paprika, cumin, salt, and black pepper over everything.
  5. Pour in the 4 cups of chicken broth, ensuring the chicken is mostly submerged.
  6. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is tender.
  7. Remove the chicken and shred it using two forks, then return shredded chicken to the slow cooker.
  8. Cut softened cream cheese into chunks and stir into the hot soup until fully melted and creamy.
  9. Stir in shredded cheddar cheese until smooth and melted.
  10. Optionally, stir in ½ cup sour cream or Greek yogurt for extra creaminess.
  11. Squeeze juice of half a lime into the soup and adjust salt or spice to taste.
  12. Ladle into bowls and garnish with chopped fresh cilantro if desired.

Notes

If soup is too thin after adding cheese, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in, cooking on high for 10 more minutes to thicken. Stir halfway through cooking to distribute jalapeño flavor evenly. Let chicken rest a few minutes before shredding to retain juices. Pre-cooked rotisserie chicken can be used to reduce cooking time.
